My lunch today.
I was craving a lot of flavour but wanted to keep it light and fresh, so I came up with a deconstructed tomato and avocado salad that hit the spot.
I diced the tomato, peeled the avocado and cut into bite-size bits. To a teaspoon of olive oil, I added a dab of wasabi and mixed like crazy with a fork to blend then drizzled it on the tomatoes and avocado.
The ginger wasn’t mixed into it until I was ready to eat it.
