Quinoa Salad (Harvest Grain Salad) ================================================================== Ingredients 1 cup of quinoa, cooked in 3 cups of water (or according to package instructions) 1/2 bell pepper, chopped 1/4 red onion, finely chopped 1 cup edamame, cooked and shelled (1 cup unshelled) 1/2 cup dried apricots, about 8 chopped 1/2 cup nuts, finely chopped (I used pecans) 1/4 cup orange juice 2 T red wine vinegar 1/2 tsp cumin 1/4 cup crumbled blue cheese (optional) salt and pepper, to taste ================================================================== Directions Cook quinoa and let cool. Once quinoa has cooled combine with veggies and apricots. Mix in orange juice, red wine vinegar, cumin and salt and pepper. Stir to combine and top with blue cheese if desired.
